chili and corn bread

my bestie susan, a.k.a. spicy or suzie-q spent the past weekend visiting us here in boston with her daughter, mckenna. on sunday she made us her homemade chili + corn bread. did i mention she’s a really great guest??? ::smiles:: susan loves to cook, and when she does – it’s always delicious!

recipe:

2 lbs ground beef; brown with 1 tablespoon cumin & 1 tablespoon oregano

in crockpot, mix: 3 cans of {any kind} beans. susie used black, kidney, and white canelli. 2 cans of tomato sauce. 1 large can diced tomatoes. 1 green bell pepper, diced. 1 onion, diced. 1-2 jalapeño peppers diced {to reduce the heat of the pepper,

bite-size apple pies

we have lots of apples around here since visiting the orchard, so we put a few more to use today with this recipe…

you will need:

1/2 c. sugar
2 tsp. cinnamon
1 pkg. (14.1 oz..} refrigerated pie crust
3 tbsp. melted butter, melted
2 medium tart apples: peeled, cored, and sliced

pre-heat your oven to 425 degrees.

in a bowl, combine the apple slices, sugar and cinnamon; use 3/4 of your sugar mix on the apples.
save the rest to sprinkle on the tops before baking.

unroll the pre-made pie crust.

i used this recipe last week for recipe club…
it was delcious. and is now added to our family favorites!

INGREDIENTS:

1 1/2 sticks (6 ounces) unsalted butter, 1 stick melted, 1/2 stick softened
1 cup packed light brown sugar
2 large eggs, at room temperature, lightly beaten
1 cup canned pure pumpkin puree
1 tablespoon pumpkin pie spice
1 1/2 teaspoons pure vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon plus 2 pinches salt
1-2/3 cups flour
4 ounces cream cheese, chilled
1 cup confectioners’ sugar

DIRECTIONS:

Preheat the oven to 350°.

barbie cake

* apologies for the poor picture quality, i took many of these photos in the wee hours of the morning, without any natural light. and, a few of them were taken on my iphone. i am by-no-means a cake decorator, simply a momma with a little girl who wanted a barbie cake, so hopefully this tutorial will help if you are in the same boat! readers, have you tried making a barbie cake? any advice?

we just made this as part of sela’s birthday brunch,
and i have to share the recipe, because it’s a delicious favorite!

this comes from the kitchen of my friend caryn,
she is oozing with good recipes!

mix:

10 eggs
1 lb shredded jack cheese
1 tsp baking powder
2 cups small curd cottage cheese
1 – 7 oz can mild green chilles
1/2 cup butter – melted
salt & pepper
cubed ham, if desired

bake @ 350 degrees for 35 minutes.

* this is a great low-carb recipe, i like that we can eat it as a family for at least two days with how much it makes…
