have you heard? the donut, especially the mini-donut is supposed to take-over the cupcake craze and be the latest-greatest new thing!
so, while preparing for kj’s upcoming birthday we have decided it would be fun to make mini donuts & let the kids decorate them at the party…
we are searching for the world’s best cake-donut recipe! this past weekend, we tried our first one. i found mini donut pans here, and we used the recipe below. it was good, it was really fun to decorate the donuts – the kids loved it! but, i think there might be a better recipe out there… if you have suggestions, please leave a comment & let me know!
we have a couple more weeks to find the best one before the party!
you will need:
2 cups flour
3/4 cup sugar
2 tsp baking powder
1 tsp salt
1 tbsp butter, melted
2 eggs, beaten
3/4 cup milk
1 tsp vanilla
1/4 tsp nutmeg
1/4 tsp cinnamon
directions:
preheat oven to 325 degrees, lightly spray donut pant with cooking oil. in bowl mix together flour, sugar, baking power, salt. add butter, eggs, milk, vanilla, nutmeg, and cinnamon. beat until well blended. fill each donut hole 2/3 full. baking 8 minutes or until tops spring back when lightly touched. cool. removed from pan and dip into glaze. decorate with sprinkles, nuts, powdered sugar, chocolate shavings, coconut – whatever you desire! donuts may also be dipped into cinnamon and sugar instead of the glaze. yields approximately 36 mini donuts. we used a bit too much batter in our holes, so we had 24 donuts. next time we’ll use less so the donuts appear better, without muffin tops as an end result!
glaze:
1 cup confectioner’s sugar
2 tbsp HOT water
