chili and corn bread

my bestie susan, a.k.a. spicy or suzie-q spent the past weekend visiting us here in boston with her daughter, mckenna. on sunday she made us her homemade chili + corn bread. did i mention she’s a really great guest??? ::smiles:: susan loves to cook, and when she does – it’s always delicious!

recipe:

2 lbs ground beef; brown with 1 tablespoon cumin & 1 tablespoon oregano

in crockpot, mix: 3 cans of {any kind} beans. susie used black, kidney, and white canelli. 2 cans of tomato sauce. 1 large can diced tomatoes. 1 green bell pepper, diced. 1 onion, diced. 1-2 jalapeño peppers diced {to reduce the heat of the pepper, remove seeds & ribs}. mix in meat. cook on high for 4-6 hours

for the cornbread, susan recommends using any basic cornbread recipe, but take out the oil & replace it with a can of creamed corn.

  1. I saw the picture on instagram and was craving chili after. I made a batch last night and am so glad I did. I forgot how much we like chili! Even miss 3 had 2 bowls. Thanks Susan (and Jane too)
