A night out with women and salads

I don’t think I can keep up with more than one blog, so an entire blog just for recipes isn’t going to happen for me, BUT, I can add it here now and then…
These are two of my standby salads that I made yesterday for an event…. if you are interested in trying either of the two, here are the recipes –

Broccoli Salad
1 ½ – 3 cups small cut up broccoli pieces
2 cups medium grated cheddar
1 pound fried bacon bits
¼ cup finely chopped red onion
1-3 cups raisins
1 16 oz. can cashew halves

Dressing:
1 c mayo
½ c sugar
3 tbl. Red wine vinegar

All of the ingredient amounts are optional so you can choose more and/or less of what you like in it.

*NOTE, if you choose to double the salad – then I suggest tripling the dressing.

Raspberry Tapioca SaladBoil 3 cups of water, when boiling add:
2 pkgs Americana Tapioca pudding
1 3oz pkg raspberry jello
Boil for 5 minutes, stirring constantly!
Remove from heat and cool

Add: 1 pint heavy whipping cream and raspberries (frozen or fresh) Refrigerate
My favorite fruit is raspberry but you can change the jello/fruit out with any combination you would like.
