frozen grapes

back when we went on this trip, the resort/casino we were staying at did this really awesome thing.

each afternoon when we’d be hanging out poolside, about once an hour the pool attendants would bring around trays of snacks/treats to sample. one of those treats, were sweetened frozen grapes.

now, when you’re sitting poolside in las vegas and it’s topping one hundred degreezzzz…almost anything frozen is going to be perfect. but these sweetened frozen grapes were so good!

so, i had the pool attendant ask the kitchen what they put on them and tried to make them in my own kitchen for the fourth of july…

i think they were a hit-i took bags of red grapes,

this recipe comes straight from the kitchen of Dusty’s mom,

grandma connie.

we made a double batch of homemade ice cream sandwiches tonight.
we’re gearing up for our fourth of july weekend festivities!

and can i just say, i loooove it when my man helps me in the kitchen!

HOMEMADE ICE CREAM SANDWICHES

TEXAS CAKE

combine:
2 cups flour
2 cups sugar

bring the following ingredients to a boil and add to dry ingredients:
1 cup water
1/4 cup cocoa
1 cup margarine

mix well and add:
1/2 cup buttermilk
1 tsp.

This is one of my favorite things we enjoyed when living in Korea.

Ingredients
4 citrons* (available in many Asian markets)
1 1/2 cups of sugar
1/2 cup honey
* May substitute with any citrus fruit
*(4 oranges, 5 lemons or limes, 2 small grapefruit, etc)

Directions
Wash the fruit well in cold water.
Peel then remove and discard any white remaining on the fruit.
Cut peel into thin strips.
Segment the fruit.
Place fruit and peel in a bowl in layers, covering each layer generously with sugar.
Cover and let stand at room temperature for two to four hours. (sugar should be dissolved or be transparent).

What a fun night!
It was my turn to host, and one of my very dearest friends – Susan – came early to help me cook. I want to share with you one of the cutest & easiest things she makes-
First of all, you only need spray oil, fancy shredded parmesean cheese, and a bowl.
Spray your pan, make a thin layer of cheese in a circle, fry, when it starts to golden, carefully flip the cheese over using a fork, fry till the other side is also golden. Remove carefully and place over a small bowl. It’s optional, to use a second bowl to place over the cheese to help it form.

Artichoke dip

In large bowl, mix:

2 pkg. cream cheese
1 cup mayo
1 cup fresh Parmesan cheese (from Costco)
1 tablespoon dill
1/2 jar marinated artichoke hearts (from Costco)

Place bowl in microwave, heat for 3-5 minutes (3 times) stirring in between.

I serve the dip warm with sliced demi-baguettes. YUMMY!
* I usually double the recipe.

Grapefruit & bananas

This is a grandma Connie original, something Dusty grew up with. Its very simple and I love giving it to my family a la carte with breakfast or lunch through the fall/winter for extra vitamin C.

4 grapefuits sliced in half, slice out each little section and squeeze out juice.
2 bananas sliced
lots of sugar
