What a fun night!
It was my turn to host, and one of my very dearest friends – Susan – came early to help me cook. I want to share with you one of the cutest & easiest things she makes-
First of all, you only need spray oil, fancy shredded parmesean cheese, and a bowl.
Spray your pan, make a thin layer of cheese in a circle, fry, when it starts to golden, carefully flip the cheese over using a fork, fry till the other side is also golden. Remove carefully and place over a small bowl. It’s optional, to use a second bowl to place over the cheese to help it form.

This is so yummy! My dear friend Susan Bland {a.k.a. Spicy} told me about her latest greatest snack, and it’s this –

Apple cinnamon rice cakes & Almond Butter. The first night I made it, I used peanut butter because I am a BIG peanut butter fan and because I didn’t have any almond butter. I have since bought almond butter and even being prejudice to peanut butter, I must admit, the almond butter is very yummy and has 0 sodium compared to peanut butters high sodium, otherwise, the nutritional content between the two are identical.
Also, a favorite stand-by for me is – corn nuts…but I’ve been told it’s common for people to break a tooth chewing them,

Slice cucumbers
squeeze fresh limes or lemons over the cucumbers {can substitute with bottled juice}
Salt to taste…

Quite frequently someone I know or don’t know inquires about my diet.

First of all, I use the word “diet” cautiously. I do not mean the rather negative connotation of the world equaling “starve yourself, trying to lose weight just this week, etc.” I mean, diet as in how I have been eating for the past 5 years and how into the indefinite future plan on eating.

It’s really quite simple. If you are interested in trying this, keep in mind, {disclaimer} I am not a doctor or licensed nutritionist whatsoever! I have done a lot of research on my own, and this works really great for me. I also believe genetics plays a huge role in our body types.

Artichoke dip

In large bowl, mix:

2 pkg. cream cheese
1 cup mayo
1 cup fresh Parmesan cheese (from Costco)
1 tablespoon dill
1/2 jar marinated artichoke hearts (from Costco)

Place bowl in microwave, heat for 3-5 minutes (3 times) stirring in between.

I serve the dip warm with sliced demi-baguettes. YUMMY!
* I usually double the recipe.

this is one of my favorite snacks. Long ago, I thought these were something unique you could only order at sushi restaurants and then one day I found a 4 pound bag of them at Costco and couldn’t believe my eyes. Then, Costco stopped selling them for about 6 months (really sad moment) and they made a return recently in a 12-pack case of individual packages. I LOVE IT! It’s even easier now to microwave the packs and take them along for the kids and I to eat on the go. Our favorite way to prepare them is warm with rock salt. If you have never had edamame, it’s a must that you go and find them!
