Yumm… Feel good soup. Great for a chilly day! Karin sent me this recipe, and it is a keeper! Very good!Â
Chicken and Corn Chowder
3 cups frozen corn, thawed
1/2 cup chopped onion
1/2 cup green pepper, chopped
1 Tbsp oil
1 14.5 ounce can of chicken broth (I added an extra cup)
1 1/2 cups cubed, peeled potato
1 cup milk
1 Tbsp flour
1/4 tsp salt
1/4 tsp pepper
2 slices bacon, cooked (I used 4 pieces)
2 6 ounce chicken breasts cooked, shredded
1. Blend 1 1/2 cups corn until smooth
2. In a large saucepan, cook onion and pepper in hot oil until onion is tender but not brown. Stir in the broth. Add potatos. Bring to a boil, reduce heat. Cover and simmer for 10 minutes.
3. Stir in corn and chicken. Cook uncovered for about 10 minutes more, until the potatos and corn are tender, stirring occasionally
4. In a small bowl combine milk, flour, salt and pepper. Stir into corn mixture. Cook and stir until thickened and bubbly. Cook and stir one minute more. Add bacon, cook and stir until heated through.
